***There are pancake recipes in these pages, and when you prepare pancakes there are a few things you need to keep in mind. You should let the underside brown a bit, while paying particular attention to what the bubbles on the top of the pancake are doing. The top of your pancake batter should be bubbling, but those bubbles need to remain open before you flip or turn over your pancakes. Just because batter is bubbling doesn't not mean they are ready to turn. The bubbles will tell you when your pancakes are ready for turning. So pay close attention to them!
These are old recipes and most call for fat. Use either butter or Crisco for most of them.
Sweet Potato Waffles
4 Tbsp. fat
1 Tbsp. sugar
1 egg, seaparated
1 c. mashed sweet potatoes
3/4 c. flour
2 tsp. baking powder
1 c. milk
Salt, cayenne, nutmeg (to taste)
Mix the fat and sugar to a cream, stir in the well-beaten egg yolk, potato, flour, baking powder, milk and seasonings, and beat well until smooth. Fold in the stiffly beaten egg white. Bake in a heated waffle iron until golden brown. Serve, dusted with sugar and cinnamon.
These are great serve with turkey!

Baked Creamy Omelet
2 slices bread
1 c. milk
6 eggs
Salt and pepper
Chopped onion
Crumble the bread and allow it to soak in the milk while the eggs are being prepared. Beat the eggs until light, add seasonings and then the bread and milk mixture. Bake at 360F in a well-greasedshallow pan and when done roll as y ou would a jelly roll.
This will serve 6

Breakfast Apples
5 tart apples
1/2 Tbsp. Crisco or butter
1/2 c. sugar
Cinnamon or other spice
2 eggs
Cook apples until very soft, then mash them and add butter, sugar, eggs and spice. Bake at 350 in a shallow pudding dish or pie tin until brown.

Creamed Eggs
6 hard boiled eggs
2 Tbsp. butter or Crisco
1/2 onion
6 slices hot buttered toast
2 Tbsp. flour
2 c. milk
1 tsp. salt
1/4 tsp. pepper
Remove shell from the eggs and cut each egg into six pieces. Heat the butter in a frying pan and cook the chopped onion for a few minutes until yellow but not brown. Remove the onion, make a sauce of the butter, flour, liquid and seasonings. When it thickens, add the eggs and when they are well heated, turn the mixture out on to the buttered toaste and serve at once.

Robin Hood Brunch Eggs
Split and toast English muffins. Saute circular pieces of boiled ham and place them on the halves of muffins with slices of broiled tomato. Arrange on each a poached egg and cover with cheese sauce.

Fluffy Potato Pancakes
3 c. grated potatoes
6 eggs, well beaten
1 1/2 Tbsp. flour
1/8 tsp. baking powder 1 tsp. salt
1/2 tsp. onion juice
Pare large potatoes adn cover with cold water. Let stand 12 hours. Pour off water and grate potatoes. Drain well. Add eggs and mix lightly. Stir in remaining ingredients. Drop from tablespoon onto hot well greased skillet and brown both sides. Serve with applesauce.
